  • Hi there, just wondering if I could get some advice. Feel free to disregard this comment if not.

    I dry my biltong by the window sill with the ceiling fan in the room running constantly so it gets a mix of ambient and artificial air flow, but it seems to get case hardening each time I've tried making my own biltong. Do you think this could/should be remedied by turning off/on the ceiling fan intermittently or is this likely to cause mould?

    • Does your biltong box have a heat source of its own fan?
      Case hardening occurs because the outside of the meat is losing moisture at too fast a rate for it to compensate with deeper water being able to come to the surface.
      One thing you could try is thinner pieces of meat, or to try tenderise the meat.
      You could also try using a bit less salt or blending the salt with something else.
