Yes, but it seems to be only true for stores that fulfill online deliveries, plus only non-crusty bread is now marked down early the next day.
The reason is that a lot of online orders are now packed close to a store’s closing time, and Woolworths wants to avoid selling marked down bread as part of online orders and have to do $1 or $2 refunds every time someone orders bread that happens to be marked down, so they hold onto bread overnight and mark it down early the next morning.
