And 4K60 streaming in YouTube/Netflix is perfect. 12th Gen CPU's like the N95/N100 have fixed function hardware that decodes VP9 and AV1 in the GPU which makes media playback perfectly smooth while consuming very little power.

I am more leaning towards the 5800H but what would be best for databases/game servers?
I'm using an N100 box as a proxmox host - running a few linux VMs and containers, and honestly I can't fault it. It depends on how much you're going to scale up the databases - if they're just for development/lightweight use, then you don't need much CPU at all.
On the other hand, the 5800H would have more headroom and can go beyond 16G ram (which if you're running a lot of stuff might be worth it)
It'll just be some dev instances; I am more concerned about running game servers than the database side. That is more a nice to have if I want to let friends have a play, but I don't think I would be able to max it out with just half a dozen of us.
Are these decent quality? As reliable as Lenovo or alternative mini PC's?
Go for AMD or used core i5-8500T mini PC, like M720Q tiny.

Things like AV1 decode in hardware and much lower power consumption are important to some people. They make for great little HTPC's.
Astrophotographers
I have the N100 model for Astro. It works great inside but I find wifi is a bit weak outside where I do the astrophotography. scope may be blocking wifi so maybe a usb wifi dongle may help.
Yeah I’ve got a TP link one to extend the range when I use the Beelink but I’ve switched to a MeLE Quieter 3Q now which works better
