Doing a trip around Europe next month for 4 weeks with a set schedule by train to Poland including a number of cities there, then on to Germany including a number of cities with the final destination being Amsterdam Netherlands.
What's the best crowd you would suggest pre booking trains and seats with ?

This is good provided you know all the intervening tickets and are confident you know exactly what to book. If I'm booking within a country I would be pretty happy to book my own tickets, going between countries I would be thinking about using Eurail or similar. You don't have to pay reservation fees for Eurail if you aren't going between countries nor going on scenic railways; you can just rock up and hope - be careful that you know what festivals are happening because if you don;t book they won't guarantee a seat on the train. Personally I'm happy to pay a little bit more for piece of mind it was probably done right. However YMMV.
Yeah, if you book ahead, for most holidays a pass like this is not necessary. Do your own research with https://www.seat61.com/ and it's much cheaper. But the pass is more flexible.

Decent price, make sure to do your own research though. You still have to pay reservation fees on the trains even with a Eurail pass. Worked out $200 cheaper for me to book individual tickets compared to a rail pass + reservation fees.
It's good if you don't have a set itinerary and want the flexibility.
