yes, many people do use office 365 and google apps.
but we have many customers that prefer to have internal mail server and can not rely on a cloud/3rd part hosted mail solution. As they have unique mail software running that has features they require, or they prefer to have all their mail hosted inhouse. Some companies have rules they have to abide by, by not allowing their data being hosted in another country.
This is not for people/business that use 365 of google mail, which has their own failover solutions in place.Many assumptions here.
Office 365 and Google Apps likely run more reliably than your on-premises infrastructure.
You can run a hybrid configuration to keep a minimal on-premises footprint which enables you to run "unique mail software".
Data sovereignty indeed is a concern, hence why Microsoft have Australian data centres in place.

Can you strip classified and top secret from the subject and put smiley faces there? My boss doesn't want to get into trouble running her own mail server.
So this only retains X days? Do you plan to have a product where you backup the email which could be via IMAP? There are services that do this now but not a lot of them which may be because people expect their emails to be backed up and always available and/or because the price is too high.
do you mean have a mx/mail server that receives the mail first before forwardng onto your mail server? and keeps the mail as a backup for so many days/weeks/years ?
More a service that collects all your existing mail via SMTP or similar with the option of getting a copy of the emails via MX so you have a backup if your account is removed or lost.
Most other services seem to charge by the GB so you can keep a backup of all your mail?
Pricing seems high,
$10 a month starting price ($6 with discount) is more than a lot of provides charge for just email. I could pick up a Vultr/Digital Ocean VPS for less and have no user or time limits
If you can't miss an email I wouldn't have an internal solution for email when things like o365 etc are worthwhile
