Camel x 3 alerted me to the lowest price since October 2021

Kicking myself that I bought it a few months ago when it dropped to $55.

Excellent reference book to have on the shelf for cooking techniques and as a gift for a beginner cook.

If you spend any time on cooking forums this is often recommended as a beginner text/all round gift.

    This book is outstanding - well worth the price even without a discount. Kenji's Roast Potatoes recipe has had friends beg me to bring them to future dinners - this will absolutely level up your cooking game. The Wok (Kenji's newer book) is also fantastic too.

      I’ve had this book for a few years now. It’s awesome. It’s kind of a book that I sit on the couch and read. He does science and experimentation with food to find the best way of doing things. He taught me to flip my steaks multiple times, against the advice of various mates and my dad. It actually ends up a better steak.

      This book has an awesome southern American fried chicken recipe I’ve made successfully various times. I’m not much of a deep fryer too.

      I respect Kenji. I bought an outdoor wok burner based on a review comparison he did. And it’s great.

        Nah you should be good. I use the book mostly for the theory than the recipies. I use a chef inox wok from amazon and wok burner on my gas stove.

        It's been fantastic for me - recipes and techniques have been consistently good. The Scallion Pancakes recipe from the book (also available online) has been added to my regular rotation along with the dipping sauce - it seriously impressed my girlfriend's Chinese parents. Was worth the book's price for that alone.

    • IMO this is the best book for Chinese cooking. I've learnt so much it's my go-to, and so easily explained.

    How does this compare to the salt fat acid cookbook?

      This book is more detailed and scientific, personally I found it more enjoyable/interesting (especially the audiobook).

      Salt fat acid IMO is a pretty good simple breakdown of balancing flavours and practical stuff.
      Kenji goes deep on the science of cooking though.

      I've not read his book but his only articles for serious eats etc have influenced my cooking a lot.
      Lots of myths around best ways to cook a steak (e.g. bringing to room temp is bullshit, etc), eggs, sauces, deep frying and so on. I find it very practical.

      He essentially just does repeatable scientific-ish tests on all the popular methods and breaks down why certain things work better than not.

      That said, lots of great free content on serious eats and places like that already.

    • Both are great books and explain the 'why' of cooking. I'm a decent home cook and I learnt a lot from this. I found the Salt Fat Acid one a bit more cheffy than the Food Lab.

    • I’m also curious if anyone had compared Harold McGee’s “On Food and Cooking: The Science and Lore of the Kitchen” to the two books you mentioned

    • There’s a lot of weirdos in the foodie section of the internet who have parasocial relationships with figures like Kenji

        I don't feel they're parasocial, just people who didn't jive with the humour or wanted to jump on the feminism bandwagon to show their allegiance to the movement. I provide here an excerpt from a review -

        Just about every other page he makes some crack about his wife or his mom which range from mild (“I realize now that dislike of vegetables is entirely my mother’s fault (sorry to break it to you, Ma)”) to incredibly offensive (“Whether stirring sauces, tasting soups, or gently whacking cheeky spouses who disturb you in the kitchen, a wooden spoon is the tool you’ll want 90 percent of the time…”). I’m sorry, but YOU CANNOT JOKE ABOUT SPANKING YOUR WIFE. EVER.

        This kind of attitude is something I can never excuse…

        To me, that joke is not incredibly offensive, and spanking your wife isn't an attitude that needs excusing when performed in the right contexts
