I agree a N100 with 16GB should be a bit better for most or all things, but it depends a lot on the use case and what people are wanting to spend.
For HTPC, for example, running LibreELEC, there'd probably be nearly no difference……even with 4GB ram.

I believe you can but you can only put one storage disk in this.. so you'll have to remove the existing.

Depends on your use case, budget, constraints, energy use.
Judging by comments from recent N95 deals, it's probably better to spend a little more for a mini PC with an N100 processor for substantially better performance.
And 8 gigs of RAM is barely enough these days…
