  • I've never done a kveik, but I'm keen. Is this a good choice or is there something else people generally recommend?

    • There are different types of kveik, Voss is one of them. Some people swear they can taste a fruity tang, other say they can't tell the difference. I like it a lot.
      Just make sure you give it a few days to clean up after fermentation is finished.

    • The good thing is if you get the temp to 35 plus, it ferments out in about 2-3 days with no off flavours.

      nearly 100 beers brewed and ive predominately used kveik yeast, everyone says to go cool but ive gone the opposite and gone hot. My fermenter is heated so i can keep the temperature at 30c when fermenting, i hot cube my wort and pitch the next day at 31-32c. Had lots of friends try my beers and they rate them highly, so hot is great in australia especially for people who just want to dabble with it at first, buy a wort kit and a packet of voss yeast and throw it in your cupboard in a plastic fermenter , even in the heart of summer in qld. itll be fine and give you a decent drop.

      My current voss batch was done fermenting in 1 day and is now having a few days to clear up the off flavours ready for kegging this Saturday. Voss does give off some citrus flavours at high temps and also ferments at a higher attenuation so you can end up with a drier beer. Using an app like brewfather and you can build recipes around this so it ferments to a normal original gravity so the beer isnt so dry. This is mostly by mashing at a higher temp than normally called for by a few degrees higher.

      Overall in the kveik yeasts my order of preference is:

      Lutra - Gives a very clean beer can be used in most styles
      Voss - i use in wheat beers and stouts
      Hornindal - used for IPA and pale ales

      I ordered from this store last time 6 packets of Voss, came in the post just under a week and was packaged well enough. Would buy again especially if they can get there hands on the dry lutra packets.

      • Thanks for the advice. Will try Voss but I'm not setup for hot fermentation. I gave the diamond larger yeast a go a month or so back. Was quite impressed. interesting fennel after taste for me which is great given I like a wheat profile
