The Westpac offer I've had in past worked for gift cards, so you can get a Coles/Myer card for 20% off essentially. Coles/Myer card can also be redeemed at Coles for gift cards for other retailers

yes, although you would have to total $320 at checkout to make that stack work, because the CBA deal requires $300 charged to the card.

As long as you pay $300 on card, you can do whatever with the rest.
FWIW, when Commbank rewards had a similar deal with Myer, I purchased a $100 gift card.
It appeared on my Commbank statement simply as a $100 purchase from Myer, and I got my cashback.

I went to a JB Hi-Fi store today and it stocked Stan gift cards.
… unless you're saying that JB Hi-Fi removed Stan gift cards from their system so you cannot actually purchase one anymore, even if the store had them stocked in the gift card section?

I rang up hurstville and Roselands and they said they are not selling them anymore and all of jbhifi are not either.The store I went to was outside of NSW, so not very helpful for you.
Just ask them to check their inventory and figure out which store near you has them

Has anyone got paid yet? Last time i took advantage of an offer it took about 4 days for cashback, its been 11 (business) days for me now, hopefully it will get paid out this week without me contacting them! (Says up to 14 business days on t&c's so still a few days to go I guess, but was expecting it to be faster as it was last time)
