The Klipsch pack would certainly be fine for that Yamaha 5 channel av receiver. You have more than enough power and enough channels to run these.
Would a Yamaha HTR-2071 have enough power?

Ive gone through the surround sound phase but ultimately i think a high quality stereo 2.1 is more versatile. Buy high end Bookshelf's ~$800-1200

Earphones may be even more versatile by that comparison.
if you're comparing 6 speakers + avr to just 3 speakers for the same cost, then probably yes the 2.1 system will be better. But you should start with a good 2.1 system and then add in more speakers with avr when you can afford it. Don't cheap out just to get surround sound, unless you don't care about sound quality and only watch movies.
Can the bookshelf speakers be mounted as rear surround speakers on the wall?
They could (up to the receiver really), though it wouldn't be as ideal as having them as side surrounds since that is what 5.1 sound mixes will be expecting.

Best placement for 5.1 surrounds is a bit behind and on either side angled in to your listening position.
bookshelves speakers are speakers. it can be used for anything. front, surround or atmos. its just another speaker producing sounds towards the listing area.

That's the same kit, with a different sub. Jamo and Klipsch share some models - they're both part of the same company.
Is R series the newer model of KD series or are they completely different lineups.

Have just received and installed the front speakers, surround and the subwoofer. Amazing sound quality, the subwoofer is a different beast. Bright and clear !

And then waiting for the Denon 1700 to arrive next next week for a full 7.1 experience!!
Did you find any alternative to the X1700h. It seems to fit the bill best currently for a "budget" amp, but was hoping to move away from Denon.
From all the research, the 1700h was supposedly the best of the lot when compared to pioneer or Onkyo in this price range. West coast was able to sweeten the deal by offering a sub $1200 deal. Tbh I haven't seen and auditioned any of these. Just desktop research
