I've been going back and forth as i have a i7 7700 and just picked up a 3070. The Ryzens look good but are never in stock but this might be a worthy upgrade

I'd just pull the trigger. The 5600X is notionally $469, but I fail to see how it's over 50% better than the 10600KF for it to command that price premium. Not to mention you won't be able to find it at that price for perhaps another few months. You won't notice the difference in games with a 3070 anyway, so just save the $170 and put it towards more RAM, more SSD storage, a nicer case…etc.
The Ryzen 5 3600 is a decent alternative, but if you're gaming, the 10600KF is faster.
May as well wait for the 11 series if you have a CPU now. Though if you really want a Ryzen it's listed as instock at this store.
Maybe just enjoy your PC and re-evaluate when Rocket Lake comes out. If you're already yearning for the modest bump a 10600K would give you, you might be getting that feeling again in unusually short order by spending the time and money upgrading now.
the i7 7700 is a pretty poor cpu these days especially on locked chipsets with low ram speeds but I would hold off now and see how rocket lake is before making a buying decision.
MFW i7 6700K and playing most games at 2k 90Hz. Its not a terrible CPU, there’s still plenty of life in these chips.
My z490 matx arrived today, looks like i timed it well. Cheaper outgoing parts, insane prices on incoming..

The $200-ish entry level Z490 boards are perfectly fine for this a 10600K. FWIW, a similar B550 motherboard will cost around $50 less, so that's the Z490 premium I suppose.
That said, the 10600K is faster than the Ryzen 5 3600, which is actually currently more expensive, so overall a good deal.

Not really a "problem", how exactly is PCIe 4.0 relevant in a $299 CPU? GPU performance is not impacted by PCIe 3.0 vs. 4.0. I would suggest most people are not paying for PCIe 4.0 storage with a $299 CPU either (if you are, then you're budgeting wrong).

Good price. But you don't "need" a Z490 motherboard unless you want to overclock it. This good CPU is compatible to run on much cheaper motherboards like H410M for around $119, which is great if you're on a budget.
Will add that if one wants to get an idea of relative performance with the RAM speeds on non-Z chipsets (2666 for 10th Gen i5, 2933 for i7/i9), have a look at AnandTech's CPU reviews, as their test methodology sticks to the CPU spec whereas most other reviewers use XMP.
If you're gonna do that you might as well get a 10400F for cheaper. The clock speed difference isn't worth $90. Plus you get a CPU cooler
True, but running the 10600KF at 4.6GHz all core max Turbo Boost defeats the point of buying an unlocked K chip.
You might as well save $100* and buy a i5 10400F which runs 4.1GHz all core max turbo. Neither will bottleneck any GPU that one would realistically pair that setup with.
*Actually more, as this doesn't count the aftermarket cooler you would have to buy for the 10600KF.

Z490 is definitely worth it for the 10600K. Given it's only $50 or so more than a decent B460 board, you'll be able to hit 5.0GHz all core, or even 5.2GHz if you're lucky on your 10600K.

Sort of, you can get 2933mhz out of some cpu's only rated to 2666mhz.
You should see the reported prices for the Z590 boards (facepalm) lol there's a few examples on Amazon right now available for pre-order.
