  • What is the advantage of a slow cooker over a pressure cooker?

    • Not sure but I leave my slow cooker on while at work. :D I just found this while looking at jaffle irons. Figured someone needs a slow cooker.

      I believe it all comes down to time and taste, Mr Binksy

      Slow cooker
      -Cooks for a long time at a low temperature (~70c-ish, usually unregulated), which is low enough to cook the meat without the undue damage to proteins and such you'd get from using a frypan, while still being high enough to kill any bacteria that might cause stomach upsets.
      End result is fall-off-the-bone meat that's tender and juicy. However it does come at the cost of time (5 hours+) and energy cost (0.5kwh+)

      Pressure cooker
      -Raises the pressure inside the vessel. As water boils at a higher temperature in high pressure, you can cook food in a higher temperature bath (120c-ish) without it turning into steam. Because water is a better conductor of heat than gas, the food cooks faster.
      However, as you'd expect, the higher temperature act on the vitamins and proteins, denaturing them and removing some of the nutritional value.
      There's also some risk to it. If the valve fails, you end up with basically a bomb in your kitchen. Chik chik boom

      Really it depends on what recipes you're cooking. I think it used to be that you could buy tough, low quality meat at cheap prices, cook it in a slow cooker, and make it taste like higher quality meat, essentially justifying the initial cost and the time involved by exploiting a low priced waste product. But meat seems to have risen in price such that that strategy is no longer justified. Now its more about taste (and bragging rights - saying at a dinner party "for dinner we have a exquisite slow cooked beef bourguignon, with sour cream and chive stuffed baked potatoes" sounds better than "Ey gang! I just deep fried some chicken in me ol trusty pressy cooker. It's finger licken good! Everyone dig in!)

        We have both.I used the pressure cooker to make a lamb curry the other night.It took less than 35 mins including prep time. There was no complaints from the diners. One of the guests,who fancies himself to be a bit of a masterchef, even commented on how the meat was falling off the bone and that it must have taken hours to get it this tender and the gravy so flavourful😁

        The slow cooker has never been used and I'm seriously considering re-gifting it to my mate, the wannabe-masterchef. His birthday's coming up soon. I might even throw in an elaborate lamb curry recipe to go with it.

        • Not sure about you but the one complaint I have with pressure cookers is that meat can taste a bit gamey, I believe this is because nothing in the cooker gets out and so the taste of meat can be a bit overpowering. Probably not as much of an issue with some meats and with things like curries that have strong spices, but things like lamb shanks and beef cheeks taste better I think out of the slow cooker

            @Jackson: I find that if I a add some garlic and ginger to the meat when I'm sealing it, it takes away the gamey taste.

  • I have the Ronson pressure cooker which coincidentally has a slow cook function. It has served me well over a number of years but has been replaced by my trusty tiger rice cooker which also has a slow cook function. Although Ronson isn't a household name i'd have to say it does more than a decent job whether your making rice, a stew, soup etc etc.
