Unless you need silicon I think the plain steel ones are better. The silicon can make it hard to pick up some types of food. Silicon ones can slip and slide whereas the metal will grip / dig in. I only bought silicon ones (a few years ago) because there were no normal ones on the shelf.

  Siliconev fongs would be best appropriate for non stick pans as the metal tongs will scratch the surface.
