      Those aren't bad. And their you-beaut handle might work on all my cheap and cheerful pots and pans whose handles have fallen off…

      That said, I swore we'd never buy another non-stick pot. Since moving over to two cast iron pans and a steel wok (plus heat), I haven't looked back… the results are too damn good. Key I found is in using a 10x10cm scrubber made from round-edged stainless steel rings instead of a scourer. Barely have to use it though, nothing sticks when you condition the steel properly.

        Exactly the same experience.

        $200 frying pan. It's just a mess now. Lasted 1-2 years.

        Standard steel pots I bought from KMart when I was 17. Still going 17 years later.

        Not saying cheaper is better but if you want a set go for standard not no stick and they will last a lifetime

        • Sadly my Kmart cast iron cracked the enamel off after a couple years but hey, for $25 it’s not too bad! And you can cook bread in it as well!

      • How do you condition them correctly though? How about a frypan for eggs and more delicate items?

          Yep, no stick the old fashioned way beats the hell out of teflon with all its limitations on temperature and propensity to flake/fail and get scratched.

          I condition more or less every other time the pan gets washed.

          Clean the pan with your metal scourer of choice. Don't bother polishing it. Just take the flakey stuff off. Apply a thin coat of high temp oil, such as vegetable oil. Heat pan on a high flame till its really hot, add oil if not added already (I keep a can of Canola oil under the sink to just spray on a light coat at this point). The pan should get really hot, and the oil should get quite smokey. Don't let it burn dry, just get it to smoke point and keep it there till the metal has had a chance to soak up some oil, which it actually does. Tip: A new silver steel pan will start changing colour at this temperature.

          Then let it cool down. Best also to use an exhaust fan as there will be a little smoke.

          After that, store the pan with the oil on it, so it cannot rust. Quickly wipe excess old oil off and ensure the pan is ALWAYS hot before you begin cooking. Add a small amount of your choice of oil. If the pan is cast, getting it hot will take time, so get used to putting it on and coming back after a few minutes to condition or cook.

          That's it. There are plenty of youtubes that show this.

          I was having the worst results with nice stainless pans until I started doing this and cooking quicker, at higher temperatures.

  • Given up on expensive pans. Purchased myself a pair of Jamie Oliver Tefal on catch of the day, worked great initially, frying eggs without oil etc, however the non stick coating wore off very quickly on both. Always handwashed and took great care of it.

    Have been using a $10 ikea wok instead now, simply amazed and couldn't be happier.
