Who's gonna store it? That would mean you have to clean it (the plastic tray gets grotty) when there are no dishes, dry it or wait for it to dry, then put it away.. what are you going to use that bench space for before dishes build up again?

  With the advent of open plan kitchen, dining, family areas putting away a dish rack that isn’t in use is not unknown, as is using a tea towel to dry dishes and put them away.
