why would you not just go with the optus plan?
Optus $30: 1.5GB data (+500 MB extra if signup online) + Unlimited Local standard Calls & Text + Unlimited Text to selected countries
Virgin $30: 3GB data + Unlimited Local standard Calls & Text + $50 for standard International Calls/Text
If I have an S7 with 4GB for $xx dollars and am paying more for the contract, will they drop it to this?
I know I'm paying a certain amount for the phone and a certain amount for the sim per month.
Edit: To answer my question, no. I'm paying $60 for an S7 with 4GB rollover data and international minutes.

Many prepaid offers are better than this and provide flexibility.
Considering you got 10GB for $40 not that long ago with $600 of calls, this really isn't such a good deal.
