Coffee was introduced in El Salvador in early 19th century and its climatic condition enabled the country to grow rich sweet cherry beans. From 1950 to 1970 the coffee production in El Salvador went through technological modernisation, new varieties of coffee were introduced such as Bourbon which is now about 68% of the country’s varietal distribution. The prevalence of the less productive but higher quality heirloom Bourbon variety is due to El Salvadors civil war in the 1980s which kept it in widespread modernisation of more productive varieties.

El Salvador is known to be one of the most productive coffee producing in the world. Quality control is a hallmark. Coffee is graded by growing altitude with the highest quality of above 3950 ft, being graded as Strictly High Grown (SHG) coffee.
