    I was in the market too, but picked up the Scanpan Commercial set at $199.
    I don't like glass lids and the Commercial range is the only one with all metal lids.

    Shame that it's all made in China now.

          Stainless steel from china is cheap, pretty good and probably quite safe.

          But if you want me to throw out the baby with the (non-stick) bath pan? Great!

          @Schpeltor: I saw a doco last year which actual showed that most of the components of the iPhone are made in other countries like Japan, Korea, France and Italy. China just assembles the phone. I think less than 10% is actually made in China.

          Let me clarify (in a thick bottom stainless steel pan) I have no problem with Chinese products as long as elements of them can't get into my bloodstream.

          Saying that, all things being the same, I'd prefer products from just about any other country than China. It's a very dodgy country!

      +1 for Scanpan Commercial, I got some of these fry pans from Harris Scarfe over a year ago and am very happy with them.
      They always seem to be on special!

        yeah, on special I think they are a very good buy; they look good and they feel very sturdy and durable - wouldn't pay full price for them though (i guess that's the OzB way for anything though :p).

    • Curious to know why you don't like glass lids, does it affect the cooking at all?

        I've broken or chipped them before.

        I also find that during cooking they condense up, so you can't see the food anyway, which meant most of the time I was lifting the lid anyway which defeated the whole selling point of glass lids.

    • The Kitchenwarehouse Scanpan Impact 6pc set looks like a slightly different deal.
      It has 3 sauce pans but no Roaster.

    I believe all non-stick pans scratch and they are all poisonous - new coatings just contain variations on the teflon theme.

    I've been using regular pans and if you cook using oil at the right temperature and allow a 'crust' to form (about 1 minute), use a spatula and/or shake the pan, you shouldn't have any sticking.

      I ditched the non-stick rubbish a few years ago and have never looked back.
      I only held onto a small 20cm non-stick pan for eggs etc, but even now I don't use that - stainless or cast iron pans only

      • Exactly. I just worry about all those years of toxic gas released from teflon, etc.

      • all no stick is teflon PTFE based regardless of what they call it and try and rebrand it to …… hence the max temperatures it can take. I just kept non stick for eggs and pan cakes …. which don'st need high heat and so last a long time…..steaks get the steel pan so I can get the temperature up.

        I find the scan pan handles a bit narrow on the sauce pans, so they are a bit hard to tilt if you want to pour from them …… I have a set of the scan pan ti-ply …… great except for the handle shape.

        • I cook fried eggs/omelettes in a wok with plenty of oil. Quick! Scrambled egg in a normal pan on medium heat.

          My wife bakes with non-stick. But women have equal rights. so she can do whatever she wants! Cancer here we come!

    Bought a Scanpan Impact 30cm frypan 10 years ago. You could do anything to it and all you had to do was soak and it would literally wipe clean perfectly. Bought another one a couple of years ago and after frying brown areas (oil I guess) develop that do not come off at all with a green scourer. Haven't tried steel wool yet. Scanpan absolutely not interested even though they are supposed to have long warranties. Really not happy with them anymore and wouldn't recommend them. If you are reading this Scanpan, Janelle or Mark, please free to comment.

    • the oil bonding to the stains is not unique to scanpan …. happens to other brands also ….. especially the longer you leave it …….try oven cleaner works a treat….. the steel wool will remove it, but then the scratches make even more stuff stick to it. Also salt causes pitting in stainless …… those pits allow stuff to stick.

      Google Sitram Cybernox ……. it's a steel alloy, non-stick …. the hotter it gets, the slipperier it gets …… good to 800 celsius , hard to get in Australia, mine came from the USA.

      • Thanks garage sale. It's just that with the old Scanpan impact frypan we never ever have this problem on either side of the frypan after frying. It doesn't appear at all. With the newer one it happens frequently and cannot be removed with a green scourer. As people have written above, I too would never use a non-stick pan. We had one, I think a Scanpan also, and I noticed that it was totally cracked and peeling and falling off, presumably into the food. We took it back to Peters of Kensington and they know about the problem and replaced it. But is it worth the health risk?

        • I don't think so - if you learn how to cook properly with stainless steel, then there is no reason at all to go back to non-stick.

          What's happening with your newer frying pan isn't unique to Scanpan, but it is still interesting that you had no issues with one and problems with this one. There is no coating or anything on the pan to prevent sticking which is probably why Scanpan aren't interested.
