  • I like the one star reviews on Amazon, apparently these knifes (at least the steak ones) break if you drop them.

Heh, I hear you. But just keep in mind that the one & two star reviews make up just 7%. Four and fives attract 86%. Not too bad for a product on Amazon.

On the note of these knives breaking upon dropping, yeah it doesn't sound good. Especially if you are prone to dropping knives. But I think this reviewer's comment responds to it best:

One thing to keep in mind, these are high carbon steel as is any other knife of good quality. While high carbon steel is strong and can hold an edge for a great while, it has a fairly low impact strength. If you drop these knives just like any other high carbon steel blade, they can snap in half.

      • thanks!

Any input regards to rusting from water beads?

  • Any reason to think these knives are good?

I'm after a new set, but looking for something quite decent for the longer term. Given the quantity of knives included here along with the shipping price, I can't help but think that these will be a real budget set.

You can't help thinking of the saying, you get what you pay for. You can only go by the reviews on this set. For whatever they are worth. Recommended names in quality knives include Wusthof and Global. Whatever you decide, get yourself a good quality sharpening system.

      • +2

Global aren't really good knives…. Just have good marketing especially with master chef. There are plenty of better Japanese knives than Global.
Wusthof are nice German knives though, but slightly different properties when comparing them due to different metals used.

Good to research the different metals between Japanese Knives and German Knives before purchasing. They both have their pro's and con's

        • What brands from Japan do you recommend?

        • @thinggy: It really depends on what type of knives you want. For international brands (e.g. marketed internationally), I would recommend Shun they make some seriously sharp knives.

Miyabi & Kasumi does awesome knives, but they are harder to find in Australia and they are quite expensive (e.g. 1 knife would equal to around the same price as a global knife block). Tojiro knives are cheaper and more for the starter chef's or chef's in training, their knives are good.

Many pro chefs will tell you the same…. You actually do not need to have 5 or 10 different knives, just need 2-3 knives and you are all set for cooking. When you start to cook alot, you will notice there is only 2-3 knives which you use all the time, the rest will just sit there doing nothing.

Also remember knives aren't all about the sharpness, it is also about the balance. e.g. if you hold it just after the handle with your 2 fingers on the side, does it balance out without you having to put pressure and balance it yourself.

Also to note with high carbon knives, they will rust or develop rust if you have the tendency to leave them in your sink and water soaks them for awhile. Always wash after use then dry, don't just throw them into the sink.

Someone put all the knives in the block upside down!!

Can't make any comment on the quality of these knives but I have a set (from a different manufacturer) with similar handles and they're really comfortable to use if you've got bigger hands.
