Go an ultrawide 34 inch 3440x1440 you can fit 2 windows side by side and it's usable whereas a single 2560x1440 is too narrow.

Go PETG, I'm using Jayo PETG on my Flashforge and it prints great with the Sunlu PETG settings in OrcaSlicer.
