    Why are you looking for end grain?

    I thought conventional wisdom was that edge gain was better than end gain due to the glue.

      End grain is better for keeping your knife sharper for longer. And I personally like the look of it better.

      I had heard that your knife lands inbetween the word fibre, instead of on top of it. The fibres separate where the knife goes and provide less resistance than edge grain, meaning your knife retains sharpness for longer. How much longer, I don't know, but it makes sense to be

      I thought end grain was better for the knives? So that the blade slotted between the grains, causing less damage to the knife and the board would then "heal" back to its previous state?

        The glue is stronger as compared to gluing end grain vs side grain… but is overall MUCH weaker than a solid block of wood?

    Lots of interesting responses on between the grains… but I'm not sure that's really how it works. I'd be thinking that knife hardness / board material hardness would be the bigger impact on sharpness retention.

    America's Test Kitchen did a very interesting experiment years ago on this using a machine to simulate 5,000 cuts:

    Overall I'm not sure I buy the whole 'between the wood fibre' argument. Even when I use an end grain board, I am almost never cutting perfectly parallel to the grain (I might be cutting diagonally or at an angle). I acknowledge that the board will look less scuffed though, but I think it is more marketing from manufacturers to sell us cheaper boards (i.e. cheaper blocks of wood glued together rather than a single good piece of wood).

    • End grain boards are harder to make.

      • This is the most relevant variable in the cost of an end-grain board. Setting aside any functional difference, this aesthetic is significantly more laborious to achieve.

    End grain is good but acacia is very hard so it's not great on your knives.
    If you're chasing end grain for blade edge retention, you also want walnut or maple or another softer wood.

  • Seeing as this is all glued together is there a health risk from the little cuts which may take off the glue compared to a solid piece of cutting board?

      for that to happen, you either have the sharpest knives in the known universe or you're using your knife like a hammer.

      Generally speaking wood/PVA glues are food-safe.

          Get them on an ebike for delivery and make those kids start saving for your retirement. My kids are the laziest. Both under 11, haven't earned me a single dollar yet so I'm getting an appalling ROI.

        • I don't know where in the depths of my mind I got that from. I feel maybe it's from social media when cleared headed fitness guy is critiquing a gen Z gym "influencer" and their precious stance in a gym. "You are ruining my shot, even though you had no idea my phone was hiding in the corner recording. I just need the content, I'm not really here to work out".     Acacia is still a really hard wood with a high silica content - so even end grain acacia is going to be really hard on your knives.

    I went down this rabbit hole recently after getting some nice Japanese knives and the best deal I found was this füri end grain Ash board which is around $50-$60 if you grab it using the bonus 35% cashback at woolies everyday market.

    Ash is a much better wood for this purpose.

    • I thought the proper move was a board made of a solid piece of Camphor laurel wood

      • Theres a range of woods that are much lower on the janka hardness scale than acacia and are good for boards depending on preference. Camphor Laurel is good, as is Ash, Maple, Walnut, Beech, Larch and in some cases you could get away with Teak.

        You could go even softer and get Japanese Hinoki/Cypress but you trade away a lot of durability for the softness

          • @Davelovesdealz: I think most woods are naturally antibacterial to some degree - if you end up with gouges etc in the wood that youre concerned about you can just give it a quick sanding and refinish with food safe oil/wax

  • I'm not convinced about the whole grain thing either… even the softer/harder wood is very debatable. Softer wood scar easily and then cleaning it properly becomes almost impossible as stuff gets trapped in the grooves. I for one have no problems with sharpening my knives if I need to.

    Also, Aldi has a pretty good chopping board like that comes on sale every now and then. It also features a deep/wide channel all the way around which is really good to avoid a bloody mess. Super easy to clean too.

      If you're concerned about all of this I would just recommend a decent synthetic board.

  • Don't people use wood to keep away from micro plastic and chemicals etc? These are still full of glue.

      • It's an Acacia wood chopping board, of course it's a like, it's just a cheaper version, it wasn't a link to a toilet brush.

    • Read up on the differences between end grain vs long grain, decide if it is worth the price difference to you. Buy the Kmart version if it isn't, simple 😊
