      do you keep your open bag of yeast in the fridge?

        Transferred to a silicone sealed jar, but yes in the fridge - if you don’t use it often, you can keep it in the freezer but let it come to room temperature for a few minutes before using

      • I bought a similar size bag of Lesaffre yeast (made in France whereas Bakels is made in China) and split half of it off into a few zip lock backs, then put them into a sealed container in the freezer. Left the rest in the fridge for over a year and toward the end was having to increase the amount of yeast used a bit. I'm pushing the boundaries on how long I've kept it for but the stuff I got out of the freezer works as good as new (about 3 years old now) and I just transfer a bag from freezer to fridge as I run out.

    • What’s the difference between this and the usual dry yeast from supermarkets? I have a big container (not the foil sachets) I keep in the freezer so it doesn’t die or something and that seems to work.

        It’s just a higher quality version of the same thing. Just like the quality of the flour you use makes a difference to the bake, so does the yeast.

  • off topic but anyone been able to replicate bakers delight white bread loaf? they're super soft even the next day but haven't been able to replicate using Laucke Bread Flour

      You'll probably need to use more additives like dough conditioners if you want to replicate commercial bread.

  • Nuts about life's regular yeast price is cheaper than this. I've never had an issue with their yeast. Unfortunately unavailable at the moment.

  • these bags are amazing and last for ages. I bought a bag back in covid and baked every weekend for 2-3 years straight and still have some left over. although, a lot of the times it was using 5g of yeast for 6 pizzas.
