Hone it with the edge of another knife or a sharpening steel. You're more likely to bend the fine sharp edges than to break them; stones and sharpeners cut in an edge, while honing just lines things back up again.
I usually grab the masterfoods cleaver and use that - nice fat edge and my hands are clear.
I have this from a Myer coupon a few years back; excellent kitchen knife for the price when compared to other cheapies and would buy again.

whats the best way to keep these things sharp? I have a stones and sharpeners which I feel ruins the edge without proper care
