    Shun knives are generally pretty good but are just typically a bit more expensive for what they are. Personally I would recommend looking at Tojiro DP knives which are widely considered the best bang for your buck Japanese knives.

        Reddit seems to think Tojiro.

        But honestly putting that aside you'll get an equivalent Tojiro for cheaper than the shun so I think that's already a good reason to consider it.

      I agree normally but this price is pretty good for a Shun. Shuns fit and finish is quite good and handle material is nice but I always find the sizing off, handle too smol, not even blade length or height for the type of knife etc.

    • What steels are used for these? No (or generic) specs usually means cheaper/lower quality. Not that VG10 is high end but at least it'll keep an edge for a while

      • I'm pretty sure all DP are VG10. Descriptions are always poor on anything sold by Amazon Japan so you need to know what you are looking at.

        • Well according to the Tojiro website it's "Molybdenum Vanadium Steel" with no further info. It could be OK but judging on price it's probably something like Aus8/440B or similar. If that is the case the Shun the OP listed is better value for money IMO

    SG2 steel. Rockwell 63. Slightly harder than VG10. I quite like the geometry for a large petty/small utility knife. Even if Miyabi isn't the most popular, it is mostly due to the brand being overpriced, which this knife is not.

    • Thanks - Miyabi are ok, now owned by Zwilling, but not sure how much of a deal their 13cm paring is for $127, especially when - as OzBargain Premium members might know - a Mac Superior 12.5cm paring is $55, which can also be bought in a 2pc set with the 18.5cm utility/chef for $124, so cheaper than the single Miyabi alone! Yes, only HRC 60-61, but better value imo :)

      • Definitely cheaper. Better value is arguable. A knife made from SG2 steel doesn't get much cheaper than this. MAC superior is AUS8 steel that has a subzero process similar to Zwilling and Miyabi. About the same as VG10 so is good value as compared to the Shun.           In terms of properties neither really stands out as being an amazing performer

          in practice, how much better is SG2’s edge retention actually over VG10?

          • @tonester: I definitely see a difference with the Miyabi with SG2 when compared to a Shun premier with VG10 with respect to edge retention. How much is hard to say as it is usage dependant, but it is noticeable. I managed to slightly chip the Shun (since ground out) but the blade is narrower so that isn't conclusive in my mind.

  • Nice knife. I bought a steel (non-stainless) knife in a department store in Japan for around AUD100. It has the layered lines but only near the blade. It stays sharper than all my other knives for months longer. The edge is all stained dark grey from corrosion but I don't care.

    However, the geometry of this looks better than mine. On mine, the 'butt' (which is thick for European knives, and thin for Japanese) is basically 90-degrees from the handle. But in the Shun knife, it looks like it's got a larger angle from the handle. I've cut my fingers on the sharp corner there a couple of times, and it sort of can dig into the chopping board a bit. The Shun looks like it would sort of mitigate some of these issues.

      You can use one of those black erasers to rub the corrosion and remove. Sounds like the knife is carbon steel, to stop that just dry after washing as the water causes corrosion

        In Japan now and been trying to find tojiro dp in stores with not much luck. Went to the tojiro dp shop in kappabashi and prices were similar to Amazon and I’d have to carry around Japan.

        The price for tojiro on Amazon jp was less than 10% cheaper in Japan but didn’t want to risk delivery delays when we are moving around accomodations etc. so planning to just buy one for deliver back to aus.

        Many other knife stores in kapabashi barely have starting options under $200

      • Have a look at Amazon Japan, the Tojiro Fujitora equivalents were much cheaper (whereas if you buy an actual Tojiro knife from a retail store, the savings aren't that significant even with the tax refund). I had a couple delivered to my sister's hotel when she went there, but I think there are options to ship it to convenience stores as well.

      Not this one, but a shun classic or anything with more curved edge profile/belly would mitigate digging. E.g. Victorinox, Wusthof, etc. not Tojiro DP.

      The obtuse chin is actually for easy wiping. Speaking of which, just wipe the edge of your stainless clad knife during use and completely dry it afterwards, that's it. Grey/blue patina is fine, it actually prevents orange rust from forming.

  • Tojiro FU-807 has come down in price and is a stunning knife at $80. Nothing really comes close imo for quality vs price.

    I bought this last year, it's a $200 knife and not for everyone, but it makes me very happy!
