Buy a genuine Thunderbolt dock. It's worth the extra expense. I use a dock at work and at home to drive 3 x extended displays from an M1 Max MBP.

What you can do is buy an external GPU enclosure, which lets you house a full sized GPU in a separately powered box with a thunderbolt connection to your laptop, but be very careful with what you buy because compatibility can be an issue.I looked into all that some years ago and came to the conclusion that it was far easier and pretty much the same cost to just buy an entry level gaming PC from Techfast.
