    Not a knife expert, but, at that price, it's a bit concerning when there's no mention of the type of steel used in the manufacturing.

    Edit: reviews show that it uses a very high quality Japanese steel.

      Fairly well known brand with info readily available from the manufacturer.

      At full retail could probably get 30 or so kiwi knives and not have to bother sharpening 🤣

      Super Gou has a SG2 Micro-Carbide powder stainless steel cutting core with a super hardness of HRC63 on the Rockwell scale. The knives in the series have an impressive 161-layer blade with a splendid Damascus steel pattern and its Japanese name engraved on both the blade and on the grip end. The beautiful red-black Canvas-Micarta handle is attached with three stainless steel rivets. It is an exceptionally beautiful and crafted knife that delivers supreme cutting performance.

      Won a number of awards. For close to that price you can get a set of Global. But this would be that one special one you'd get out every now and then. Seems the avg price is around $400-450 so this isn't a bad deal.

      these are 420J2 steel, corrosion resistant but poor steel for a knife, won't hold an edge. You'll be sharpening them every week in a home kitchen.
      The Yaxell is SG-2 , keeps an edge while also relatively easy to sharpen.
      I don't know a lot about knives but I have cheap knives and I have one VG-10 knife, another decent steel.
      That one gets sharpened a quarter as often as the others and holds a sharper edge.
      These sets are always 70-80% off, their full price is preposterous and their discounted price is still excessive.
      I'd suggest putting that 383.99 into a nice chefs knife, a good utility knife, a ceramic sharpener and a ceramic honing rod.

        Don't get a ceramic sharpener or a honing rod if you have japanese steel. Thats not good advice. Get a whetstone. Thats it. Everything else is unsuitable for steel over 60 HRC

      I'm pretty sure that some of the Damascus on baccarat knives are fake too, they're lasered on 😅

  • Knife snobs are at least consistent. I've been using a Shun Premier 25cm knife daily for about 5 years. Tip is broken off, blade is chipped, and, to be fair, it's not been well looked after - still just brilliant though. It's incredibly well made and shows barely any signs of use outside of the blade itself.

    It's universally regarded as overpriced, mass produced, mediocrity.

    Might just try the Yaxell though.

  • How does this compare to the global knives? I love my global, super light and easy to use.

      This kinfe is a lot better, steel is harder and holds its edge a lot better, but for the price it a tad expensive. I'd got for a lower tier Yaxell (something like a Mon series), which can be maybe be the same price as a global on sale.

    • What I was told when I purchased my Yaxell knife about a year or so ago is that the Global Knives are great, but are made in three pieces, so they are more prone to breakage. Yaxell's are also harder, so they will keep their edge longer before needing to be sharpened (guy said 12-24 months depending on how much you use it, which seems pretty on the money so far). Global's also have chromium in them, which means they are less likely to suffer from staining, whereas Yaxell's need to be cared for a little more (i.e. you have to hand wash and dry a Yaxell when you are finished it - can't leave it out otherwise it will stain/rust).

      • harder edges stay sharper for longer but are also more prone to breaking.

    This is a trash knife. I paid $375 for my Shibata Koutetsu, which is a much better knife. This knife is thick, and aesthetically horrible. Not only that, it has an asymmetric bevel. So unless you want an overpriced, thick knife, that wedges vegetables, and has an asymmetric bevel, STEER CLEAR. There are much better value knives out there. Don't spend $300 on a knife unless you have done the research.

      • Sharp knives do yes. They reduce oxidation, and result in better tasting food.

  • Is there a good cleaver which doesn’t get damaged when chopping bones ?? Probably I should learn how to properly butcher meat I reckon! Nevertheless, would be great to know from knife enthusiasts. Ta

    • Use cheap cleaver from chinese shop to cut bones. Don't waste money on expensive cleaver, they gonna get ruined anyway.
      I use free one from Coles (when they did a knife promo) and it works a treat. Much sharper than I thought
