I've been waiting for a reasonable 3080 deal for some time now, really thought there'd be something this week.
Same here, been waiting for a month for solid deals and been zero GPU deals this whole black friday period thus far.
Seems all the resellers are keen on keeping prices artificially high to encourage buyers towards RTX 4080 with it's abysmal sales.
Like so many resellers have priced 6900xt and 3080/3080Ti a few hundred and in many instances more expensive than 4080/4090. It's a crappy practice by all involved. Looks like I'll be waiting for 7000 series, but given current behaviour of stockists, I will imagine we'll see a 20-25% increase above the USD-AUD conversion to further keep old gen cards at premium prices.

Paid $500 for 5700xt used and thought made a mistake paying that much cash. Ended up selling it for $1200.

Not just GPUs either. Looking at some other specific components (PSU, CPU, MB, monitor), they have all been cheaper in the last couple of months.

No, they cancelled the 12GB version. This is still overpriced though, wait for AMD 7000
The 12gb version was a xx60/ti card with how cut down it was along with its xx60 class memory bandwidth. Even the 4090/7900xtx is cutdown, both nvidia and amd are just moving the specs of their dies down while keeping the same name+pricing. Naming skus are purely marketing now.
980ti+1080ti+2080ti used the full die and memory bandwith, they just had less vram compared to their workstation counterparts along with not having workstation certified drivers.
Imagine if amd made a 4 core cpu and called it the r5 8600x while calling their 6 core the 8800x. CPUs are much simpler in this regards so they can't pull that off but most people don't know how gpu segmentation/cutdown dies work.

Because nvidia deliberately set the 40xx at the same $/flop so they didn't damage 30xx sales. No competition to force them to drop the price.
Hopefully that'll all change when amd launches their 7000 series in a few weeks.
Probably not, considering they've carved up the market with proprietary APIs (cuda, nvenc…). They are no longer 2 companies competing over supplying a common "commodity", they are almost at the point of selling to different markets, acting somewhat like a duopoly.

This deal on the RTX 4080 seems like a best case scenario (for a card not selling), that is US RRP converted to AUD + GST and you get to ~$2K. Add another 15% for an in demand card at the lower end (e.g. Asus TUF) and work up from there. The RX 7900 XTX starting from ~$1,850 perhaps?

That's true. I'd guess most of them could easily spend that much, but really, really hate over spending. And at the end of the day it's a hobby for most and there are ways more important things in live than gaming or looking at fancy RGB.
I've been a PCMR guy for 25years, but I got myself an Xbox series X and the experience playing on an 85" TV (not even an oled) is soooo much better. Granted, competitive playing isn't possible you will always lose against PC, but that can be relaxing to… You know you don't have a chance so the games are way less sweaty. At least that's my experience.
