      I wonder what the useful additional features are. I used to have the original model and never used all 7 features. Was an awesome machine.

          I have the Duo Nova and use it everyday. What do you mean by it "seals lid for you"? Are you talking about the part where as soon as the lid aligns, it automatically "drops" into position?

    What are some actual use cases for this that I can't achieve with regular appliances in my kitchen? Never really understood instapots.

      Anything you would use a pressure cooker for (including quick cooking (eg, qickly rehydrating dried beans) or sterilizing jars and equipment) or as a slow cooker.

      It depends on what appliances you already have.
      - I have a pressure cooker, I rarely used, because it was too fiddly to do manually. With the InstantPot you press a few buttons and walk away until it pings you to tell you it is ready. You then can let it drop pressure naturally or press the release button. Great for stews, soups, etc.
      - we use it to make Yoghurt.
      - we use it to cook rice. The pressure cooker method allows you to make a decent risotto without standing at a stove and putting stock in, one ladle at a time, and stirring.
      - it makes great porridge with the “pot in pot” method.
      - it makes a great corned beef. The pressure cooker drops the time for cooking the meat and the vegetables.

      The InstantPot is great for people who don’t have much space in the kitchen; because it replaces several appliances.

      My kitchen is pretty well equipped but the two cooking appliances, I use most, are my InstantPot and my Scanpan non stick wok.

      If you are a Costco member then wait until they have an InstantPot sale and go buy one. You can then try it for 90 days and return it if it isn’t for you. However, be aware, Instanpots, and Costco, are both addictive cults.
