Just picked up a 32cm carbon steel pan from Victoria's Basment for 70% off. Never used this brand before so can't vouch for quality but I'll take a punt for $12 bucks + delivery.

Isn't blue steel different and unrelated to carbon steel (as the OP has described the pan)?
Bluing refers to the finish they use to prevent rust. Shouldn't make much difference if it's blue or black
When it comes to cookware, blue steel is just a finish/coating on carbon steel.
