I make 'Italian style' 🇮🇹
1:3 Ratio so, for every 1 cup of lentils, 3 cups of water.
For 1 cup - 3x table spoons tomato paste (or 2 tbsp and can of crushed tomato/passata using less water)
1-2 tbsp olive oil
1x tsp dried basil/oregano
1-2 fried diced onions
2 cloves chopped/pressed garlic
Salt and pepper to season
Bring to boil then cook on MED-LOW for 10-15m or until absorbed, stirring every 2-3 mins.
This dish is an artist's canvas. I add roasted capsicums/peppers, chopped chilis, sharp cheeses (parmesan, pecorino) or even fried bacon strips 🥓 for a heartier protein boost to the final dish.

Great for soups and one pot curries. Rinse well First
I boil a kettle full and pre boil mine in a bowl before straining. Gets heaps of the starch out.
Haven't thought of that.. usually just thow in the pot with lid on, after rinsing and let cook with other stuff. Goes great with red curry paste;P
