  Thanks OP worked for me, I had to do the following:

  1. Create new Nintendo account with country set to USA
  2. Create new user in Nintendo Switch console and link it to your newly created account
  3. Purchase $10 Nintendo eShop Gift Card from Amazon USA https://www.amazon.com/dp/B01LZNGPY3
  4. Purchase and download game, pay for game using gift card

      Your AU Amazon account will work on the US Amazon website. It will charge you $10 USD (Around $13.56 AUD) plus any international conversion fee you have on your card (usually 3% unless you have a no-fee card)

    It doesn't let you pay on the USA eShop with an Australian credit card or Aus PayPal account
