          I've just replied to DonWilson below:

          16GB M1 version is CTO ( Configure To Order ), we can do back to back orders but it will generally take 4 - 6 weeks from build to ship before chipset shortage.

          But M1 is so good, most performance review/benchmark mentioned you don't need more than 8GB RAM for most of the applications.

          I hope I have answer your questions, and if you do have more questions please let us know.

              @nightelves: Agree, Apple should make it a standard instead of cutting costs on Ram, from 2019 Onwards, I believed 16GB Ram should be a base line.

      Normally you can only get those specs with built to orders. Need to order through Apple and they are very rarely discounted.
