pad kee mao recipe?
Make sauce: sugar, light and dark soy sauce, oyster sauce, water, golden mountain (optional), msg if you want
Diced dry chilli and garlic into oil in high heat wok.
Add green onion.
Add protein and fish sauce.
Add "pad thai" noddles (cooked) and pad kee mao sauce.
Add basil just before yojre done cooking.
Garnish with green part of spring onion.
I use canola oil and make sure to coat the wok thoroughly. This is a very fast dish, there should be a lot of motion when cooking. I personally like to make it flame for extra flavour, usually i flame if before the noodles go in. Always put the noodles before the sauce and make enough sauce to thickly coat, it's "drunken" noodles after all.
Add some Apple and you will have iPad Thai
