I've been a PC gamer my whole life (and i got in on the 3070) but i am seriously considering getting a console because prices like these are just insane, especially when the bar is changing every 4 years

Well the 1660 Super is about that price and is the 1080p king nowadays, just like the 1060 was back then. I guess it is just more expensive because the new cards are targeted for 1440p/4k and/or much higher refresh rates, whereas in the past cards where basically measured at how well they performed at 1080p60fps, which they are now overkill for, so if you don't increase your resolution it is still very affordable. Hopefully in the next year or two 1440p gaming is a bit more affordable with cards that can handle it under the $500 price point popping up.
I’m feeling the new Xbox series will be pretty good transition from pc.
