Yes, it's expensive compared with gmail or even fastmail but for those who are super-privacy conscious or already invested in the Proton ecosystem it's a discount at least.
More expensive than previous year's Black Friday sales as the VPN is bundled now, so the $39 USD (~$54 AUD)/1yr Plus without VPN may appeal more to some.

For this price, it would probably be better to just self-host an email service using Mail-in-a-Box or mailcow on Vultr or DigitalOcean…
Personally, I wouldn't. Hosting your own can mean; regular maintenance, updates, security patching, rotating DKIM keys, managing your email filtering etc
Yeah I'm not sure email is something you really want to self host unless you have a super niche need.
On one side I agree with "no one wants to host and manage own email SERVER".
But having own domain and having ~10 mailboxes for family members makes it more complicated.
I am not making that much money so I can spend ~$50 for email service alone without blinking.

I grabbed a 2 year deal on the VPN 2 years ago and only want the VPN. This is starting to feel like Adode SaaS :( I was paying 4 euro a month now (which ends in 2 weeks) they want 7.93 a month winch gives me extra features I do not want or 6.93 if I want to keep using the VPN Plus deal. I htougnk I will just drop back to the basic deal for 3.93 a month. Not sure what's a better VPN, though I would like to change.

Which is fair, but can be a large number of reasons for not doing so.
Open source encryption can mean a lot of things: open-source encryption library, open-source backend infra or non-patent encryption methods.
They do open-source their frontend, including web app and mobile clients. I'm sure they use open-source encryption library, it's just that their backend infra—as in how they use those libraries—is still proprietary.
No catch-all support on the Plus plan.
It is $190 for the 2 year plan normally, or $180 for the special black friday deal. The 'sale' this year is weak.
The Black Friday deal has been extended by a fortnight, new expiry of 1700hrs 15 December 2020 according to countdown.
Seems there is an exchange rate trap for the unwary: you can pay in EUR (default), USD or CHF. Since paying in EUR ends up costing an extra AUD50 (and CHF an extra AUD27) for the 2-year plan, Aussies signing up should pick the USD option (as indicated in OP).
