You just need to find constant power (headlight/power windows etc) and accessories power (ciggie port/radio etc). Buy the correct fuse taps, add the car fuse onto the tap and put the tap in the location of the fuse you have taken out.
Test it, if it doesn't power off when key is gone, you have tapped the wrong fuse. And need to find another. Pretty simple. Refer to car manual to see what fuses you can tap into. No need to strip wires etc.
Another option is to buy a dashcam that has OBD hard-wiring.

This should be sufficient if you're just thinking about doing general services on the car. Just use WD-40 for tough bolts because you might not have enough leverage with the 1/4" ratchet.The quality of the tools in this are junk. You'll end up chucking out half of it.
