Can confirm the 2 step ceramic sharpener works well.

Also, don't try and catch a falling knife after sharpening …. like I did this morning.

      minosharp?

      • I have a 3 step one, works well on victorinox chef knife. Need to get a rod for honing though, can anyone comment on how essential honing is?

      • Yep

    • General Grievous does

Seriously people, you don't need 9 knives.
You only really need a Chef/Santoku, occasionally a bread knife and paring knife.

Unless you have like 4 people who cook simultaneously, and even so then you need 4 cooks knives.

    • and a filleting knife if you work with whole fish.

    • +3

Being generous, I think you could say any 2 out of the chefs/2xsantoku/vegetable knife would be ok to have (always handy to have a second main knife, eg. 2 people in the kitchen). And one could also argue the serrated utility is handy to have, just to not have to pull out the bread knife all the time.

But that's still only 5/9, being very very generous!

Knife sets are redundant at the best of times. But a chefs, 2 santokus and a vegetable knife is just taking the piss!

Based upon @UncleRico's comments in the previous Ikasu Knife post (https://www.ozbargain.com.au/node/548057) went with the Zeitaku set (https://www.ebay.com.au/itm/Global-7-Piece-Zeitaku-Knife-Blo…).

Seems to be a more well rounded knife set than Ikasu, where you would get a hell of a lot more use out of the 6 knives (Chef/Santoku/Sandwich). Wish the set came in the bamboo knife holder. But as an engineer, Functionality over Aesthetics!

Yep, UncleRico is spot on - if you have to have a set, the 18cm santoku would probably be much much more useful than the 13cm cooks.

You can do a lot worse than the G2 cooks and GS46 fluted santoku as a pair of main kitchen knives!

…but what if you want to dual wield?

    • +1

I dont know 4 - 6 seems right to me, Id prefer
      - a big chefs (pumpkin etc),
      - a slicer or maybe a carving (its a slicer really just a bit heavier Im led to believe) for carving roasts, slicing ham,
      - a bread knife,
      - a utility or petty for vegetables, and boning leg of lamb,
      - and maybe a paring if you do small work. But the smaller utility petty will do most paring too.

A flexible filleting knife if you need it too, but I have that in my fishing gear.

      Makes you ponder.
If we treated them with that respect, would they grow out of it?
Or would the complacency make of worse?

      Ah, the human mind…

How do these knifes compare to op's knifes?

    • I was gonna say "crap", but the hardness is better than average, so even their made up buzzword steels must have some decent carbon, or at least be well heat treated.

      they're probably fine.

    • The type of selling they do, makes me think they are not really even half decent (*love to see some of the blade gurus put them through real world paces). They samurai through 5 or whatever butternuts, WHOAHH, nah meh, most knives would do that with enough momentum. They used to blunt them on a hammer, show you the pile of hammer shavings, then cut a tomato too IIRC.

But a truly sharp knife will fall through almost by its own weight. Ive seen review clips of guys with fancy (several hundred $$) blue steel hand made knives chopping onions and they simply (I would never try it) small movements and just push the blade through sideways, bring the blade back to the other side and repeat at great speed, but little movements. Its little effort, if they are slicing and not pushing its very slight, astounding skill and nets a fine dice.

The sell of the TV knives is gimmicky.

    • Never heard of them although it doesnt mean they're not good.

Judging by the profile of their blades and their construction tells me they're going to be tricky to maintain.

      Never heard of Vamolcrium steel.

Anybrand that claims it's the "World's best knife" should be alarm bells to you. "https://worldsbestknife.com.au/vamolcrium-steel/" sounds hella gimmicky

Judging by their marketing schpeil its not special. CrMoVa, VG, all have molybdenum, vanadium, and chromium. It just varies how much.

10 year guarantee? Shun, kasumi, Yaxell, tojiro, all have Lifetime guarantees

For the price? Seriously just buy yourself some properly good knives, there are already enough knife deals that fit that budget without having to go with questionable quality knives:
