      What’s the issue with sliding the knives into the block? We’ve had ours for 2 years and we haven’t noticed anything.

        minimizing contact of the blade with other hard surfaces is useful for edge retention and minimize frequency of sharpening, especially since these knives have a HRC of ~58 will dull faster.

        Above user was likely talking about being careful not to "rub it the wrong way" as he/she is sliding it in.

          The block is made with bamboo, same as most chopping boards, won't be an issue unless you sit there putting it and out all day.

          • @viper8548: Bamboo is a pretty hard wood, which will dull the knives faster.

            Personally I use a Paulownia chopping board which helps with the harder steels.

            Maybe it gets softer in the afternoon?

    anyone familiar with Shun which is also famous brand. How it compared with Global? Any suggestions? Thanks.

      Not a knife expert but believe the consensus is Shun is much higher quality than Global. Global knives while great are still a stamped 2 piece construction. Shun knives are more durable.

      • Technically the Shun cutting edge is potentially a bit more fragile based on steel hardness, but edge retention and sharpness superior.

        Shun has Full Tang construction and VG10 core steels (Harder & Sharper).
        Global has 3 piece welded construction and CrMoVa 18 steel (softer)

        Global is basic, Shun (along with Yaxell, Kasumi, Miyabi, Tojiro, etc) are mid-tier.

      I use SHUN for over 10 years. They are higher quality knives compare to global. Steel type that I use are VG10 with 33 layers and VGMAX with 69 layers. Still, can’t not compare to those real high end knives but i am happy with them. I have a set of global knives, they are at very different price point. Depends on how much you want to spend. Both brands are not bad.

        • One thing I have noticed while sharpening is global’s steel is easier to come off due to the steel type. However, I paid 150 for a set of global but almost 150 for each of shun. Again, both of them are enough for normal home use. My oldest shun was purchased in 2009 in Victoria basement, still going strong and looking great.

    • Dry them after you use them and DO NOT run them through the dishwasher and you should be good to go!

    • They should, my family's Globals are more than 10 years old. Mind you, they neglect them but I can get them razor sharp before long.

    Had these for about 11 years. Good knives. Don't worry about the block dulling the blade. You should sharpen regularly anyway

      Not recommended. Recommended to just wash and dry by hand. It is a knife… it is not that hard to wash it after you have used it.

          Generally speaking, no. But if people were to do that with their Global's I wouldnt bat an eye.
          I'll kill anyone who tries to put one of my knives in the dishwasher though.

      Furi are purely a celebrity/tv endorsed product. Not worth the cash as its made of the same soft rubbish steel as <$50 sets with an ~HRC52 rating.. for perspective Globals are HRC56-58, Shun are HRC60-61 and Baccarat iD3s are HRC53.

      If you're happy with them then be happy with them. Next time for that amount of cash, get Globals at this deals price range (and I'm not even really a fan of Globals).

      Personally, I'd be very tempted to save my money and just get the Shun Classic 20cm Fluted Chef's knife for $125.30 + postage instead. There's only 5 of them available, so I won't post it as a deal, but it will do everything that six knife set will do and last a whole lot longer to boot. Could put some of the savings towards a Minosharp knife sharpener and serrated bread/tomato/utility knife if you really wanted quality.

      If you've got your heart set on the full blown Global set, I personally reckon the 6 knives on offer in the Zeitaku set offer a better mix via their 18cm Fluted Santoku knife and 16cm Sandwich knife in place of the 22cm bread knife and 13cm Cooks knife for less than $20 more than the Ikasu set. The Fluted Chef knife is one of Global's best and most versatile performers and seldom goes for less than $100 on it's own…

          I hope you took the OP's advice and added a minosharp to the deal. They will serve you well and even the two wheel version is perfect to keep your set in good working order for many years.

Will try Shun Fluted Chef recommended one if got a chance in future. I wasn't the person who cares about knives. But so many threads in those days.I can't stop myself.

              @shoppinginsyd: I ended up getting the second set. I knew it would annoy me if I didn't. Get free return postage with PayPal anyway. We bought a baccarat sharpner while ago fit $20. Doesn't seem that good. My last knife set lasted 10 years and they were half this price. Use em everyday, do I'm sure ill get my moneys worth.

                    I actually went out and bought the fluted Santoku for an extra $90 to go with my 6 piece Ikasu set. Would have been all over the Zeitaku deal if I could have found it at the time. Now I've got 7 knives to go in my 6 knife Ikasu block. Oh, plus a set of Shun Classics I bought two weeks later.

                    Ozbargain's current knife-a-rama has a lot to answer for.

                    • @UncleRico: So… purchased the Ikasu, but returned based upon your reviews. Would use the sandwich/Santoku knife a hell of a lot more than the bread/utility knife. So… let's see if the seller will accept order cancellation (within 30 mins). And will purchase the Zeitaku knife set!

                        @monkeydoo0: It's all a matter of opinion, but I think in most usages, the six knives of the Zeitaku will be more useful and are most definitely better value for the extra few dollars when you look at the better knives included.

                        Good luck with the cancellation. Presuming they're all from Victoria's Basement, surely they'll have no issue processing…

                          @UncleRico: With my cooking and general kitchen usage, I would get a whole lot more usage out of the Zeitaku than the Ikasu.

                          Looked at other Global sets, and thought all the knives were pretty much the Ikasu set. So I really appreciate your review, as I would not have looked at this set otherwise.

                        @monkeydoo0: I did same thing, but seems their customer service responding slowly. I haven't got back from them regarding cancellation. So I placed order for Zeitaku set . And probably have to return Hiro Shiro set once receive it.

                      Got a message earlier today stating they cancelled my order and would refund it.
                      I was surprised as I thought I would have to return my first order.

                      I guess it shows that they haven't actually shipped anything yet…

I can't wait their response as seems the stock of Zeitaku set is going down. And I got other items in my first order, so don't actually want to cancel the whole order. They must have heaps of orders and may process all orders after this promotion which ends tomorrow, I guess.

                          Yeah one thing I didn't realise was the first order included the 3 stage sharpener, though didn't add it to my 2nd order.
                          They can't add it in either and said all i can do is buy it again from them (pay the shipping rate again) and she can make sure they get sent in the same order, though it's out of stock :( .

                          I'm guessing my knives will be sharp for a while so will wait for them to get in stock or for the sharpener to go under $50.

                            It's more than adequate. If you're planning on getting into the true enthusiast class which would benefit from the medium wheel in between the course and the fine, you're hitting a level of commitment that probably dictates a whetstone anyway. The 2 stage Minosharp will do an outstanding job on Globals or indeed most Japanese blades with a similar cutting angle.

                              …then before I know it I have bought more knives, and a chicken pen.

                              I ended up getting the 2 stone from Amazon for the same price, shipping is quicker + shopback.

                              I'll probably not need to sharpen for a very very long time in any case.
                              I will also test this on another Japanese knife set I have to see just how well it does, as the other sharper I have is pretty shitty.

                                  "shit, so this is how easy it should feel when slicing".

                                  What is actually also pretty interesting is that the 2 step mirosharp has also done wonders for my existing Japanese knife set and made me realise the other sharpner I had is for the bin and made the knives worse!

                                  The only problem I have right now is that the set is slightly too large to fit and replace where my old set lived, but otherwise I don't see myself needing any other knife sets for a very very very long time.

                                  …next thing to replace in the kitchen is the wok. Every year we buy a non-stick wok, and then have to replace it. Might bite the bullet and buy a carbon steel one.
