    pretty decent deal compared to the silly baccarat sets being posted here recently. cook's kknife is a little short for me but thats a matter of personal preference.

      If you just want a really good value quality knife just get a Victorinox Fibrox. They're excellent for the $30 you pay. These globals are made from an average steel, so edge retention isn't going to be terrific, certainly not what you'd expect for the full retail price.

      You're paying extra for the brand, block, presentation.

      • I use a tojiro. and i have a cheap beater with VG10 core from Ikea, and a couple of fibrox boning and filleting knives. But I've played with/sharpened friends' Globals before. It takes a nice enough edge and has not bad retention… think these days all Globals are Cromova18.. for some reason i thought they used to be VG10.

    Is there a difference between oriental vs ikasu and their other lines? Or just cosmetic differences?

      Ikasu has 6 knives, this has 4. (Ikasu adds a 8cm paring and 13cm cooks).

  • I have these as well - they are incredibly sharp.

    After daily / heavy use these (like all knives) will need to be sharpened. Although we've used it for a good 2 years before having to sharpen them.

      2 years? they must be hella blunt by now.

      56-58 is really soft. Our Globals are intolerable after 3 months of moderate use.

      However my tolerance for dull knives is very low now.

      • yes! i didnt realise how blunt until we sharpened them! It did make a world of difference so probably needed to be sharpened much earlier

      • You're right, though I'd add the caveat that how you use, clean and dry them - and most importantly the type of cutting board you use - will impact how often you need to sharpen. 2 years is possible with light use, just very unlikely.

  • Do fancy global knives like these cut through meat without an issue? For example, dicing a chuck steak so cutting through sinew, silverskin, fat, meat? My old analon knives seem to need sharpening every other month to cut through without a lot of dangerous effort

      Yes.

      Coincidentally enough, cutting is actually one of the things these knives are best at.

    The Global knives look good but I'm not keen on forking out then realising I hate them due to the handle design. I still use an old Wiltshire knife because I find the more squared off handle gave a lot more comfort and control than a way-sharper Mundial knife which had a rounded handle. Ended up just giving me a big blister on the hand when I persevered with it.

    Anyone know recommended brands with a more bulkier handle, or maybe what I'm doing wrong?
    All the various Globals that are coming up have this round looking handle. Maybe if they were super grippy they'd be ok but I can't tell from the pic …

      Maybe have a look at furi knives? they are a bit cheaper but the handle is pretty chunky.

    • It is a good idea to try out a few knives in a store before purchasing. I found all the Global range very uncomfortable to hold and use. I fear many OzBargainers are going to be disappointed when they receive their new knife set and find the knives uncomfortable for them too. But probably more will find them to be just fine and will be happy.

  • Be careful there can be copies of Japanese knives. I've seen the best chefs buy fake knifes and after a couple of services they end up being donated to the kitchen hand.
