I use Macrium free and it doesn't do partitioning.
Acronis did/do offer a basic product for Seagate and WD to set up the drives.
I could be wrong but my exp over yrs most vendors have a cut down version of this with their own interface and limited what other vendor drives it can access ? Could this version access an clone say a samsung or other brands ?
If I remember correctly, it can do most things, as long as a Crucial SSD is plugged into the machine.
I think I managed to trick the software into working once by plugging the drive in, starting it up, then unplugging the drive (because I needed the SATA slot).

Confirming what NiteMice has said, I had to plug in my WD HDD to run the WD OEM version and was able to clone my Samsung SSD without any issues.
I need to return a MacBook Air (2017) to old work site, and get another MacBook from new work site. Will this, or Macrium allow me to clone the old drive (do I need to physically remove it to do it)?
Also, what's the best/ easiest way to wipe the old MacBook? I somehow accidentally saved my credit card details in Chrome (no CVV), but prefer it to be gone. I can see old user folders on the Mac (but can't access them, but assume admin probably could), so they don't wipe it well.

You don’t need any special software to do this in OSX on a Mac. Time machine can do the backup. Secure erase is just a coupe of extra steps as probably linked in the other comment.
SuperDuper or CarbonCopyCloner will give you bootable backup/clone of your drive. Both are free to use for this purpose.
So i carbon copy cloned both the mac and windows drives to seperate partitions on a usb hdd. Both should now be restorable?
would a Crucial NVMe drive be regarded as a "Crucial SSD" by this app ?
yes, nvme/sata are interface , the 'drive' type is SSD

I used to use Acronis and I have a few crucial SSDs, so I would qualify but I've started using EAUS Todo Backups free version and it seems brilliant so far. https://www.easeus.com/backup-software/tb-free.html
The Seagate version works really well with Samsung SSD's (which are owned by Seagate):

In fact the drives you are imaging don't even have to be Seagate or Samsung, as long as you have a Seagate or Samsung attached to the system as well (even a USB drive is fine).
Nice, wonder if it has any benefits over macrium free.
