Really, what makes it meh?

The use of stickers is a bit meh, but even the $1k Falcon has stickers.
Or is brickset on Lego’s payroll?
It’s by no means a ‘meh’ model imo. Here’s my quick overview, focussed on some of the negatives, if it helps.
Alot of people are looking at it like it’s a ‘UCS’, but it’s not. As such it has a few features that are targeted to ‘play’ rather than display. In addition it isn’t quite as detailed or possibly more importantly, accurate, as a UCS would be.
The model itself is good but has a few extra stickers than I would like, plus with the size of the model they weren’t able to implement corridors or rooms in the way that would have been nice, but this is because it’s a fairly narrow ship design so the scale doesn’t easily allow for this.
If you like the actual Tantive design (which I do and I’m sure many others) then I would rate the level at which it’s ‘true to the original’ at around 7 out of 10… not meh, but room for improvement in angles, features and proportions between sections of the ship. All that said, for me, it’s a decent improvement over previous designs. The build is probably a 7.5 / 10 or even an 8 out of 10 as it still captures the feel of the design quite well and the finished product is a good size and still a nice display.

It is a UCS in all but name.
It's got the piece count, size and detail of the more recent, smaller-scale UCS sets like the Slave I, Y-Wing or Snowspeeder; in fact it's the biggest out of those sets by far.

If you compare the 2019 model to the previous incarnations, it's by far and away the most proportionally-accurate and detailed.
The piece count is pretty poor. Some of the modular sets eg Parisian Restaurant, Brick Bank etc have way more pieces for much lower RRP.
And then there are the stickers. In particular the ones on the front that you have to curve to match the piece.
From the reviews I’ve read and watched these are some of the main gripes.
But the modular sets don’t carry a Star Wars license.
Apples and oranges. A "piece" can be a 1x1 brick or a 50x50 base plate.
It's actually bigger in physical dimensions and piece count compared to the three most recent, entry-level UCS sets (Slave I, Y-Wing and the Snowspeeder), which all of your self-appointed Lego reviewers praised to high hell.
For what it's representing, it's a perfectly adequate size.

The Lego Star Wars theme is always more expensive on a cost-per-piece basis due to the licensing and royalties involved.
Besides, you're comparing vastly disparate themes; not all of us care for Lego Creator/City nor have the space to keep an entire Lego city on display (which is really what the modular Creator city sets are designed for and how they're best displayed).
I certainly have zero interest in representations of mundane, everyday life in Lego form, regardless of how low the cost-per-piece is.
I just found it underwhelming. I mean it’s got the iconic shape, but there’s far too many non-white parts, cockpit is lazy and crap, and covered in stickers, engines are pretty lazy too with the grey wheels.
Obviously it’s not a UCS, but even then I found it to be “basic”.

Bought the set sitting in my display. It's nice though some random pieces were used. The detailing is very nice on the exterior and the Cool minifig with the Cape adds a bit more value. It's pretty good overall not disappointed. And the other tantives are so expensive now so U might as well pick this one up.
