I don't think the USB C is thunderbolt in this one. Check before buying.. don't want you to be disappointed later on.
It mentions USB C everywhere and not Thunderbolt. You will be able to o/p display but not charge at the same time. Will need to use the supplied barrel adapter for charging.

I have a thunderbolt enabled USB c port on a newish dell and it can charge when plugged into my thunderbolt dock at work and it can also charge when plugged into my USB C dock at home.
EDIT: the picture on the eBay listing showing the ports actually says “USB-C with power delivery”, so yes it can charge from the port.

Latitude for sure. It's more expensive and it's their "business range". Inspiron is cheaper consumer branch.
Latitudes are built better than Inspirons as Latitudes are Business Grade laptops.

The number of ram slots refers to it being "solder down"…I gather this means its actually physically soldered. Otherwise it would say 1 or 2 SODIMM slots?

I think Intel ditched the Ultrabook branding ages ago.

I use a 3 year old latitude with worse specs with illustrator and it runs fine. Not the most complex of illustrator users but still.

What do people think about the ram?
I feel like the specs and build look pretty good on paper, but the letdown is the ram at 8gb and DDR3. And then to make things worse, it's non-upgradeable. I keep seeing laptops at 8gb, and 16gb builds aren't available unless you spend quite a bit more. I have an Inspiron 13 7000 that has 16gb from almost 3 years ago, and that was had for $1100.Is 8gb non-upgradeable really acceptable in 2019 to last you for 3-4 years?

Yes 8 will be more than enough for the next 4 years.
Yeah, you're right, probably won't notice the difference between ddr3 and 4, but I just think it's odd to be putting legacy ram on a brand new model.
With regards to amount of ram, I'm usually running Chrome, Photoshop and Spotify simultaneously, and find that it chews up 7GB of my 16GB ram. Hence why I was thinking 8GB mightn't be enough.
I would but minimum 16gb too. But Ddr4 isn't supported by all motherboards, so it's not necessarily the next new thing, and will probably only be replaced by a whole new architecture
