While the peppery taste is prerogative of early harvest (greener olives) and something many appreciate, later harvest don't have that. if your oil is bitter it means is lower quality. No quality cold pressed oil will ever be bitter.
I appreciate your point regarding the peppery flavour I disagree regarding bitterness. If you do a quick google search regarding EVOO and bitterness, you'll see that bitterness is a positive quality.

That doesn't mean that all oil should be like that.
It's like saying you walked into Mazda and they only had white cars so all cars in existence must be white.Not all extra virgin olive oils from Italy taste the same nor have the same characteristics. EVO oil can be significantly different from region to region and sometimes even within the same territory.
I don't find the Meneghello Estate olive oil has a burning after taste, but yes it does have a peppery note.
Are you sure you are getting an extra virgin oil? EVOO should have an acid value of around 0.5% or less.

Ah, I re-read your comment above, and you are equating the pepper to a burning sensation.
Anyway, IMHO if you want to try a "supermarket" oil, try the Jingilli casks (available here) the biggest enemy to oil is light (which is why it always puzzle me why my local puts it all on the top shelf) so hopefully being in a box helps.
Otherwise try the Petra Estate EVOO if you get a chance. Splendid stuff for dipping, or salads. Or Esslemont Estate does a certified organic, if you're that way inclined.
Edit: Note that the "Classic" Cobram does have pepper notes if you are after that.

No they are not considered essential qualities.
Those 'qualities' are from polyphenols which are mainly found in unripened olives.
If you make olive oil from ripe olives you have much less polyphenols so you have a delicate and soft oil. However you still have olive oil.

FYI Awesome high quality Australian made olive oil.
Note - 'fake' Extra Virgin Olive Oil is rife in Europe (Italy, Spain) - as in regular olive oil being sold as Extra virgin.
The Italian police even have a special division of cops to deal with this issue (they tell by smelling the oil).
This problem is not rife here.

Roger that. Deal was posted yesterday and I saw tomorrow on the post, silly me assumed it was today. I was too keen for the snazzy pourer on the bottle.
Many people in previous posts comment on the quality of this oil but I just don't see it. I purchase an olive oil from a local butcher who sources it from Meneghello estate in WA and the difference is night and day.
