How much do you buy and how long does it last?
I still have 3 vacuum-packed wedges dated for November. Sliced or shaved has a much shorter shelf life and my wife prefers it eaten within a week or so, therefore we might not exceed a kilo this time.
Woolies are reticent to sell more than one slab of cheese.

I don't freeze it but I think you'd get away with freezing the vacuum pack. The flavour should return when at room temperature.
