I have a single Play1 and it has great sound - but I find the wifi connection flakey when moved a room away from the router. My understanding is with two of these they can be set up to play stereo.
I'd highly recommend getting either the bridge or the boost to sort out your flakey connection.
You can set-up all the speakers into a stereo pair.. Although only the Play 1 is mono out of the box so you need two to be paired for stereo.
A Play 3 plays stereo out of the box but it is very difficult to determine the stereo separation from it.
Both versions of the Play 5 are pretty good at Stereo separation but 2 paired together would be much better.

Sonos = great software/ poor sound quality
If serious about sound consider HEOS by Denon or Bluesound by NAD. I personally have switched to a HEOS 7 speaker and it's no comparison to Sonos's top of the line play 5
