Might buy but will compare it to the Samsung Evo 850 500GB which is only $205 at the local MSY. I suspect the Samsung comes out on top on most metrics.

Shouldn't be too noticeable unless you're running synthetic benchmarks all day. MLC should have more endurance compared to Samsung's (still very good) TLC V-NAND as well, but once again unnoticeable for the general consumer.
This one lasts a lot longer than the Samsung one.
It's even as good as enterprise grade drives.
They're both based on SATA3, so speeds don't matter much. These days, most reputable SATA3 SSDs have reached their bottleneck.
850 EVO has SLC cache, which could hide the fact that once exhausted, its true TLC read/write speed isn't as good as MLC drives.
I don't have 850 EVO long enough to comment on it, but I had really bad experience with 840 EVO (slow read on old files issue with a firmware workaround) and 840 (slow read on old files problem without firmware fix and died too quickly).
If you want a fast SSD that doesn't last long, go for Samsung.
Problem was also how Samsung handled the whole 840 issue. Refused to acknowledge there is an issue, and firmware update that wiped the whole drive.
For what it's worth, firmware update didn't wipe my drive.

I know with new macbooks it is difficult (impossible?) to add additional storage. Is there such thing as a case or caddy for these SSD drives that can plug into a macbook via USB or something like that?

You're not really going to get the advantage of SSD speeds via USB3, so i'de just buy a cheap 2.5" mechanical HDD instead.

Actually contrary to that, SSD's are ideal for portable storage. They're less vulnerable to failure due to physical shock and damage plus are handy for quick transfer of large files.
You will still get some advantage. On latest Mac or some of the latest PCs having thunderbolt 3 with usb 3.1, you can take more advantage of it over USB 3.0.
For random read/write, even USB 3.0 should still provide sufficient bandwidth.

I'd rather pay the extra and buy the newer model.
Intel 540 is TLC. Again, like most TLC drives, it too suffers from performance drop once the SLC cache is full.
When you look at benchmark tests, you need to be careful (especially on TLC drives, this includes Samsung 850 Evo as the stellar results can often be due to the SLC cache).
Newer isn't always better. Crucial BX100 is a great performer (MLC), BX200 (TLC) is bad (but dirt cheap).

As long as you can make use of M.2 NVmE (Samsung 950 Pro), or PCI-E SSD'd (Intel 750) sure.
Not a whole lot of difference in the SATA variety, the best of which is probably the Samsung 850 Pro.

Most ssds are limited by the sata3 interface so It'll b 550meg sec max read/writes. The m2s look good though. But so is running 2 in raid 0.
