I am almost certain there is some difference between flat mushrooms and Portobello Mushroom. Either that or my local Coles like to play tricks with me by putting two separate containers one next to the other with one called flat mushrooms and the other called Portobello Mushroom
Aren't flat mushrooms just white flat mushrooms larger than cups and portobello brown mushrooms? Like large flat swiss browns?
"Flats" are usually just normal white mushrooms at the last stage of development - in the first stage (when they are very small) they are called champignons, then when a little bigger (but the top of the mushroom is still closed so you can't see the brown "gills" underneath) they are referred to as buttons (these first two stages have the longest shelf-life). If left unpicked they develop into "cup" mushrooms (where they are partially open), and then once they open out fully, they're referred to as "flats" and this is when they have the most flavour (but also the shortest shelf-life by this time). Portobello mushrooms are a different variety, often known as Swiss Brown (or at least that was the case when I was working on a mushroom farm for several years), and are usually brown from the start rather than white - you could however have flats that were also the Portobello variety if they have reached that stage of development.
