(I am not currently near it, but I cannot recall if there is an expiry date and/or a limit of ducks i can get with the raincheck. I think it was for an entire year, and possibly up to 20 ducks??)

If you guys like Peanut Butter, check out the Bless & Lucky range, the one with cinnamon is great, it's half price in that catalog so I'll most likely stock up for a couple of months at $2.50. Everywhere else sells for $5 and I go through 2 jars a week lol.

Wow eleven is kinda a lot but then again if that's your major fat/protein source I guess it's great. Is the cinnamon one way to cinnamon-y? Like too 'spicy'. Would it taste weird with jam on toast?

Roast. Eat. Repeat.
Duck meat can be tough, so good idea to roast it fully covered to keep the steam/moisture inside. Uncover it near the end to crisp/brown the skin.
Blanch it with boiling water first to 'open' up the skin. Coat with salt and leave for a bit to dry out the skin.
Chinese Five-spice is the best with duck so coat meat/inside cavity with it, together with hoisin sauce and ginger etc etc.
Baste the duck with the juices/duck fat/honey while cooking.
Use the juices to make the most amazing gravy ever.
ALWAYS keep the remaining duck fat and fry up smashed potato's with it.
Any suggestions on how to chop up the whole duck into smaller pieces? I prefer ducks in stews etc but always have problems cutting them up into more manageable pieces.

Very simple to break down any protein. Whole fish is a pain, literally. A duck is easy. The luv a duck guys were demo ing it a few years ago at the good food and wine show. Very very easy. Just Google it.
use big chopping knife. Speed is the key.
Still have no clue how to chop it? go to a roast duck/pork shop or a Chinese restaurant and observe.

Use chicken scissors, and cut it the same way you would a chicken.
Cut the entire spine out first, then piece it into preferred sizes.

Don't do to Earlwood Coles (NSW) and ask for a rain check, as I did last time this sale was on.
The staff member that served me was rude and refused to give me a rain check on grounds that I "looked familiar" and "probably already got a rain check before". The was the first time visiting the store in months.
BTW, I made a official complaint and store manager contacted me. Supposedly that staff member got a good arse whooping.

I think they are raised in VIC. That is where their HQ is and also I seem to recall someone telling me LuvAdUck was the only game in town for some regional town where everything revolved around raising Ducks for LuvADuck.
I'm trying to find a recipe for… some kind of duck I had YEARS ago. It was from a chinese restaurant I think, but I cannot remember much else about it, other than it was delicious. I don't think it had a citrusy taste like the recipe above would have with orange juice. It was in a plastic chinese take away food container, and I think it was just the duck meat itself - no vegetables. Maybe had some sauce but I'm not sure now. The meat was moist not dry, and appeared to be cut into chunks with a cleaver type knife. I wish I could remember what it was, so we could try making it! Anyone know what the most common duck dishes are in chinese restaurants? (I know peking duck is one, but I think that has pancakes, which the dish I had did not.)
i think it is the Tangerine/orange peel duck. Haven't come across any restaurant in Australia selling this dish. It is pretty popular in Macau/Hong Kong and certain part of the mainland China

And sorry… I just re-read my post above… I made it sound like it was just duck meat. But it was still on the bones and was cleaver-cut through both bones and meat. It just had no vegetables/rice/noodles with it.

Familyman, if you cannae remember any particular flavours, it was probably just a whole duck that had a fairly basic seasoning mix (salt/ MSG) rubbed into it, then was roasted, cut up, and put into a container, for your enjoyment. Personally I love duck prepared this way… the bird has such a "quacking great" NATURAL taste of its own, there is no need to mess about with adding citrus to it etc… (a bit of MSG helps that "natural" flavour BLOSSOM though… hippies-and-pinkos will tell you different, but my advice is to ignore them) ;-P
Anyways, that's my guess. What you are remembering is most likely a good, honest, roast-duck rubbed with a bit of salt/MSG.
Yes, it definitely could have been. I don't recall any sauce being on the meat. I think it was a chinese restaurant or takeaway somewhere in the Sydney chinatown area. My wife & I have been experimenting with asian food lately. (Tonight is beef with broccoli.)

First thing I noticed in the NSW catalogue, starting 9/4 is that for this sale on Luv a duck ducks there are NO RAINCHECKS coz I was getting ready to marshal troops to get them. It is impossible to get these ducks when they are on special in the area I live, Hurstville NSW.
I got a few rainchecks last year when the special was on and have those in the freezer. I doubt I'll get any this time though I will try a few times.
