Can anyone recommend any of these games for a 7 year old girl who is also new to gaming?

Yeah I agree with getting the Lego games. I really enjoyed the Star Wars one. Game play is relatively straight forward. Lots of hacking and slashing. It's kinda open world and then you can delve into each of the chapters. They put a lot of details into it. You can do couch co op as well, so if they get stuck you can jump on and help.
A short hike is awesome. Check dekudeals for price drops.
I always recommend Untitled Goose Game as a great intro to gaming. My two daughters loved the chaos and fun and there is the option for two player co-op, so you can help out and play together.
As already mentioned, you should have a look at Deku Deals, and maybe create a wishlist there to keep an eye on prices. Look at the price history and you'll notice that games frequently go on sale, so don't feel like you need to rush and buy a bunch to start with.

I'm amazed they got harry potter to run on the switch
Does it run well? Graphics looks ok?
It runs ok, if you don’t mind 20-30fps and 40 second load times when entering hogsmeade
I haven't actually played the switch version (played it on PC) but based on the comparison videos it looks like the developers have used very low-poly models, removed a lot of assets, applied low resolution textures and disabled most of the lighting and shadow effects. They've also blocked off some of the games expansive views.
It kinda looks like a PS3 game.
