I've been hearing some wild stories and market research is backing it up…The C Market (coffee commodities market, specialty coffee costs more, but increases in the C Market correlate to increases in Specialty coffee) is at it's highest in about 15 years, the FX rate for the AUD has dropped (coffee is traded in USD), shipping continues to experience delays and crop yields have decreased. With all of this in mind China has secured close $1.5 billion worth of coffee at this 15 year high price (this week the Coffee index market his a 47 year high, that's not a typo, it hasn't been this expensive for close to 5 decades) and I've heard farmer's are also holding back selling stock as they think pricing will continue to rise and so by waiting they'll get more. It's the old supply and demand matrix. I predict the price of beans will increase as will the price of a cup of specialty grade coffee at a venue (in the U.S. a cup of specialty grade coffee is $6 on the low end, $15 on the high end, most venues have a decent pour over around $10, which means AUD they're charging $10-$15 per cup) and businesses that don't plan well will run out of stock (it's already starting to happen). It's not all doom and gloom as we're doing our best to keep on top of changes, it's just a transparent look at how 2025 will likely look, turbulent times unfortunately will put come companies out of business, but on the other side of turbulence hopefully the industry will further improve the experience you have as in a lot of instances companies will be forced to create something special or risk going out of business. Anyway, ramble concluded, let's move onto the exciting bit AKA the deal!

          Glad my responses have been helpful. No sorry needed at all, please feel welcome to keep firing off questions, especially ones aimed to improve your coffee experience. It best that once the coffee has thawed it should be kept out of the freezer. From there just store it in a cool, dark, dry place. Don't store in in the fridge at any point, only the freezer really has a benefit :)

  • I am still getting through my last bag of Sao Paulo single origin. For me personally, I wouldn't buy it again for milk based drinks. It's pretty much confirmed that my taste does not line up with SO's.

    Will give the blend a go though as the price is right.

      No stress at all if our Brazil doesn't personally suit you as I completely appreciate how subjective personal flavour preference can be. However, it would be due to the flavour not the fact it's a Single Origin, in other words the extraction results will be similar between one of our Single Origins and a blend, it's just the flavours that will vary. If you think based on your experience the extraction will change, then please send us an email as a reply message to your Brazil order as I'd like to dig deeper into your extraction just to ensure everything's on point :)

      • I'm using a Jura E8 making flat whites. Over the years have tried several SO's and never found one I liked more than my favourite blends.

        • I've found the best results from a fully automatic machine like the Jura come from using the finest setting and highest dose, then extracting a 1:1 or 1:2 ratio depending on your preference. There's a wide spectrum of nuance in comparing one coffee to another, so it can sometimes be tricky to put one up again another. Great news is it sounds like you know the flavours you enjoy, so it makes the search for the perfect cup much easier. Fingers crossed you love our Moments to Memories blend :)

  • Can we see the certification that came with the Brazil Sao Paolo that marks it as an 85 grading?

      Welcome to the wonderful world of coffee. I'm guessing you haven't come across SCA coffee scores before as it's not something the can get a Certification. In general I'd recommend not getting too hung up on most certifications as I've found that a lot of things with Certifications likely shouldn't have them and a lot of things that aren't certified are worthy of a Certification. In terms of the coffee scores, I also wouldn't recommend getting too hung up on a specific number and go more by a range :)

      Below an 80 = Commodity grade coffee, accounting for over 80% of coffee grown globally

      Above 80 = Specialty grade coffee, which is estimated to account for only 15-20% of coffee grown globally, but it is a little hard to put an exact percent on the specialty vs. commodity grade yields

      80–84.99 is graded "very good" in the specialty world

      85–89.99 is graded "excellent" in the specialty coffee world

      90 to 100 is graded "outstanding" in the specialty coffee world. It's normally classed as the 90+ category as 100 is virtually impossible (I'm not aware of any coffee ever getting 100) and even above 95 is hardly heard of

      Anyway food (coffee) for thought, hope my response is somewhat helpful :)

      • So, who graded it 85? Was it you? Are you a certified SCA(A) Q-grader? If so, that’s the certification I’m asking for and would qualify advertising the coffee with such a score. Otherwise simply admitting that your company has ‘estimated’ it at an 85, and is willing it disclose the range you think it belongs in, would suffice. Better yet, omit the rating entirely as a proxy of quality / worth / value to consumers, which is misleading if you’re just guessing a number, or worse, inflating it.

        I'm guessing you haven't come across SCA coffee scores before as it's not something the can get a Certification.

        ….I may not a Q-grader, but maybe the 140 accredited Australian Q-Graders would be certified to legitimately claim the cupping scores of their coffees. Even the likes of Craig Simon doesn’t publish the SCAA cupping scores of most of the S/Os he’s selling out of Criteria Coffee. My guess is because he knows that those who want to experience tasty coffees aren’t won over by the score, but by the experience in the cup.

        I wholeheartedly agree with your assertion that we shouldn’t get hung up on a standardised, certified universal grading number such as SCA’s scoring system. What I disagree with is companies bandying it around like it’s completely subjective.

  • Hi Tom which of these are dark roast that are good for espresso with milk? I just got a coffee machine and read that dark roasts are more forgiving for dialing in.

    And for any coffee that needs freezing, when should I put it in the freezer, some time after its degased (and if so how long is this) or immediately when i receive the coffee?

    • @LimeBlueCoffee I was wanting to know that same thing as @roofyapple has asked about the roast. My Delonghi Dedica struggles with light and medium roasts. I think its partly due to the max temp it can do. I'm keen to try your beans with this deal but am wondering which of your beans are in the darker side of medium? Thanks!

      • Hey @SimeSp1 you'll find most of the answers you seek contained within my response to @roofyapple In terms of your machine, could you please let me know the max temp the group goes to (I tried to look it up, but the De'Longhi site is down)? How much coffee are you dosing into the basket?

        • Thanks @LimeBlueCoffee, max temp is in the high 80's. Im typically dosing about 15 grams 30g out. With lighter roasted stuff I find that after purchase I fairly quickly need to increase the finness (to max) of the grind and increase the dose to get to 30g @30ish seconds. But don't have that issue with beans on the darker side of medium

      We don't have any dark roasts currently available. However, we do have a number of options that are a real treat for "espresso with milk." In terms of this deal, for you I'd recommend with our Moments to Memories Blend or our Brazil Single Origin. Our Medium Omni roasts are decently forgiving to dial in, but all you need to do to speed up the dial in process is just aim for the brew guides on our bags. What make and model of machine do you have if you don't mind me asking? Not trying to be nosy, just helpful with more info :)

      If you're going to freeze it into fortnightly potions or single doses then I'd recommend waiting 1-2 weeks from the roast date. However, if you're planning to freeze a month's worth in each bag then I'd recommend freezing as soon as the good stuff gets delivered.

      Our featured India Single Origin sure was a popular one earlier this year. There is a chance we'll get more in the future, but if we do it won't be in 2024.     I couldn’t believe how expensive it was to buy coffee in the states recently. For a great coffee in San Francisco it cost equivalent to $10AUD for a small flat white.
